Smoke, Speed & Super-Peat: Decoding Islay Extremes at the HKJC Sha Tin Racing Lounge

We returned to the Racing Lounge at Sha Tin Racecourse to host an exclusive two-session whisky masterclass for members of the Hong Kong Jockey Club. Paired alongside the thrill of live afternoon racing, the masterclass pulled back the curtain on the whisky production process—from malting and distillation dynamics to the transformative power of cask maturation.
Rather than defining Islay solely as "smoky," this session challenged members to explore the island's extreme stylistic spectrum: comparing an elegant, wine-cask-finished coastal malt with the untamed power of the world's most heavily peated single malt series.
Our head-to-head Islay flight explored two contrasting expressions:
1. Caol Ila Distillers Edition 2022 (Islay | 43% ABV)
The Distillery Craft: Perched on the shores of Port Askaig, Caol Ila is renowned for producing a cleaner, lighter style of spirit through its tall, copper pot stills. For the Distillers Edition, the liquid undergoes secondary maturation in Moscatel wine-seasoned American oak casks, balancing coastal ash with rich grape sweetness.
The Profile: Maritime peat, sweet barbecue smoke, and dried stone fruits.
The Experience: The nose opened with soft waves of coastal peat, damp hearth ashes, and subtle dried apricot. On the palate, sweet barbecue smoke took center stage, accented by warming cinnamon and cracked black pepper, leaving a long, maritime-sweet finish.
2. Bruichladdich Octomore 16.2 (Islay | 58.1% ABV)
The Distillery Craft: Distilled by Bruichladdich on the Rhinns of Islay, the Octomore series pushes single malt distillation to its absolute limits. Bottled at a powerful 58.1% cask strength, the 16.2 edition marries staggering phenolic levels with intricate European wine cask maturation, creating remarkable depth and complexity.
The Profile: Muscular, decadent, and intensely peated.
The Experience: The nose revealed rich caramelized sugar, roasted hazelnuts, sticky figs, and sultanas intertwined with a swirl of smoldering campfire embers, ripe red berries, and polished oak. On the palate, luscious dark fruits—raisins, plums, and cherries—balanced against treacle, nut brittle, and structured wine tannins, proving that extreme peat can feel astonishingly velvety and elegant.
The tasting sparked vibrant discussions across the lounge tables, with members contrasting Caol Ila's nuanced barbecue sweetness against the thunderous yet surprisingly silky weight of the Octomore. The lineup highlighted how differing still cuts and wood alchemy allow two distilleries from the same island coastline to speak entirely different liquid languages.
