We had the distinct pleasure of hosting a specialized whisky tasting masterclass tailored for the Hong Kong Professional Hoisting Engineering Association Limited (香港專業吊運聯會有限公司). Just as heavy hoisting requires precision, balance, and structural integrity, the world of premium single malts relies on identical principles of craftsmanship and master engineering.

Gathered inside an interactive seminar space, the evening blended structural expertise with liquid science. From analyzing regional distillation rules to exploring how distinct oak staves mature a spirit over decades, the association members brought incredible curiosity and sharp questions to the table.

Here is how our carefully curated four-bottle lineup unfolded:

1. Ben Nevis 10 Year Old (Highland)

• The Profile: Robust, oily, and traditionally structured.

• The Experience: We initiated our tasting journey with this old-school Highland classic. Known for its distinctively waxy, heavy texture and subtle maritime peat, it set a solid foundation for the night, introducing guests to how unfiltered, non-chill-processed spirits carry remarkable physical weight on the palate.

  
  

2. Royal Brackla 12 Year Old Sherry Cask (Highland)

• The Profile: Velvety, decadent, and deeply fruit-forward.

• The Experience: Transitioning into sweeter territory, we explored the impact of specialized wood manipulation. Finished in premium Oloroso sherry casks, this "King’s Own" single malt filled the room with rich aromas of dark raisins, muscovado sugar, and baking spices. It served as a perfect demonstration of how a secondary cask finish can completely reshape a whisky's framework.

  
  

3. GlenAllachie 10 Year Old Cask Strength (Speyside)

• The Profile: Intense, untamed, and powerfully complex.

• The Experience: The true heavy lifter of the evening's lineup. Poured straight from the barrel without dilution, this cask-strength Speyside marvel delivered a concentrated explosion of dark chocolate, stewed plums, and rich oak spice. It sparked great discussion as guests experimented with adding precise drops of water to unlock hidden layers of heather honey and citrus.

  
  

4. Caol Ila 12 Year Old (Islay)

• The Profile: Smoky, briny, and beautifully balanced.

• The Experience: We engineered the perfect finale on the rugged shores of Islay. Caol Ila 12 is legendary for its clean, medicinal peat smoke and campfire characteristics. Balanced by a coastal saltiness and a touch of sweet malt, this classic Islay expression provided a long, warming finish that lingered perfectly as the evening wrapped up.
