Craft, Chronometry & Confections: An Indulgent Whisky & Ice Cream Pairing with Vacheron Constantin

We had the distinct pleasure of hosting a multi-day private masterclass experience for Swiss Haute Horlogerie maison Vacheron Constantin. Hosted at their boutique bar, the two-day gathering brought together collectors and patrons for a sensory journey that explored the meticulous craftsmanship of Scottish distillation, paired against an unexpected gastronomic partner: artisanal ice cream and sorbets.


Just like high complication watchmaking, crafting an exceptional single malt relies on exact patience, microscopic balancing, and the passage of time. To elevate the tasting beyond the glass, we designed four custom pairings that demonstrated how varying dairy fats, refreshing citrus acids, and rich cacao unlock hidden layers within each dram:


  1. Glenmorangie "A Tale of Ice Cream" × Yuzu Sorbet (Highlands | 43% ABV)

    • The Profile: Honeyed brioche, candied lemon peel, peaches, and warming vanilla spice.

    • The Pairing Harmony: Sourced from Glenmorangie's innovative limited release aged in high-vanillin oak casks, this vibrant dram met its match in crisp, refreshing yuzu sorbet. The tart citrus acidity sliced cleanly through the whisky's rich butter-candy notes, creating a sparkling lemon meringue finish on the palate.


  2. Glenglassaugh Sandend × Pistachios Gelato (Coastal Highland | 50.5% ABV)

    • The Profile: Buttery vanilla, tropical pineapple, soft caramel, and coastal sea salt.

    • The Pairing Harmony: Named after Sandend Bay and matured in bourbon, manzanilla, and sauternes casks, this coastal malt carries a natural oceanic salinity. Paired alongside earthy, nutty pistachio gelato, the dram’s salted caramel and effervescent tropical fruit notes burst to the forefront, delivering a rich and savory-sweet dynamic.


  3. The GlenAllachie 15 Year Old × Triple Chocolate (Speyside | 46% ABV)

    • The Profile: Dark cherries, golden syrup, glazed figs, and rich mocha.  

    • The Pairing Harmony: Matured predominantly in Oloroso and Pedro Ximénez sherry wood, GlenAllachie 15 is a temple of dark fruit and baking spices. Melting effortlessly against the deep bitterness and creamy richness of triple chocolate gelato, the combination mimicked a decadent, boozy Black Forest dessert, drawing out intense notes of candied orange peel and cocoa beans.


  4. Ardnahoe "Infinite Loch" × Triple Chocolate (Islay | 50% ABV)

    • The Profile: Pungent beach campfire smoke, maritime peat, zesty orange oil, and seaside brine.

    • The Pairing Harmony: To conclude the flight with a dramatic twist, we paired Ardnahoe's high-proof coastal peat against the exact same triple chocolate gelato. The pairing created a completely contrasting profile from the GlenAllachie: the dark cocoa and rich dairy fats softened the raw phenolic bite, leaving behind a smoky, salted-fudge confection that lingered like embers on an open beach.


Watching collectors examine open-worked movements and track live pairings created an extraordinary dialogue between the precision of timekeeping and the artistry of the cask.
