Craft, Chemistry & Custom Blends: Inside Our Whisky Blending Workshop at the HKJC

We hosted an interactive and creative session in our masterclass series at the Hong Kong Jockey Club: the Whisky Blending Workshop. Moving beyond traditional tasting formats, this evening placed the pipettes, graduated measuring cylinders, and blending mats directly into the hands of the members, transforming the lounge into an active master blender’s laboratory.

Blending is the pinnacle of whisky alchemy—a delicate balance where grain sweetness, rich sherry oak, vibrant wine finishes, and medicinal peat smoke are harmonized into a unified composition.

To give participants a complete flavor wheel to construct their bespoke expressions, we curated a four-bottle global blending palette:


1. Maker's Mark Kentucky Straight Bourbon (USA | 45% ABV)

  • The Blending Role: The Sweet & Grain Foundation.

  • The Profile: Soft corn sweetness, rich vanilla, caramel, and toasted oak, providing a smooth, approachable structural base.


2. The Macallan 12 Year Old Sherry Oak (Speyside | 40% ABV)

  • The Blending Role: The Sherry & Body Anchor.

  • The Profile: Deep, opulent dried fruits, dark spice, and rich Spanish oak that add mid-palate weight and velvety complexity.


3. Kyoto Whisky Wine Cask Finished – 2025 Snake Anniversary Edition (Japan | 43% ABV)

  • The Blending Role: The Floral & Fruity Accent.

  • The Profile: Delicate orchard fruit, refined Japanese oak elegance, and sweet, crisp red wine cask tannins that introduce bright aromatic top notes.


4. Kilchoman Sanaig Single Malt (Islay | 46% ABV)

  • The Blending Role: The Peat & Smoke Dimension.

  • The Profile: Bold Islay campfire smoke, coastal peat, and dark sherry influence, delivering depth, savory contrast, and a lingering finish.


Guided by our aroma wheel and tasting sheets, HKJC members experimented with multiple trial combinations—measuring exact millilitres, analyzing changes in nose and viscosity, and adjusting ratios until they achieved their perfect personal blend. The room buzzed with friendly competition and debate as everyone compared how just a few drops of heavily peated Kilchoman or wine-cask Kyoto could reshape their liquid framework.
