Casks, Community & Coastal Malts: An Exclusive Single Malt Evening for the Australian Chinese Association of Hong Kong

We had the honor of hosting a tailored whisky masterclass and dinner for members and guests of the Australian Chinese Association of Hong Kong Ltd. Set around elegant banquet tables, the evening brought together community leaders, professionals, and spirits enthusiasts to explore the rich history, regional terroir, and maturation science of Scotland’s iconic distilleries.
From decoding the economic and sensory value of single-cask maturation to mapping how regional water, peat, and oak selections shape spirit density, the room engaged in lively discussion as we guided guests across three foundational Scottish regions.
The curated tasting flight unfolded across three distinct single malts:
1. Ben Nevis 10 Year Old (Highland | 46% ABV)
The Profile: Waxy, rich, and traditionally structured.
The Experience: We launched our flight at the foot of Scotland's highest peak. Matured to showcase the distillery's celebrated un-chill-filtered weight, this Highland staple opened with aromas of rich apricot jam, fresh orange zest, dark chocolate, and a faint kiss of wood smoke. On the palate, notes of bitter orange and aromatic tobacco carried through to a long, warming, and spicy finish.
2. GlenAllachie 10 Year Old Cask Strength (Speyside | 59.4% ABV)
The Profile: Decadent, muscular, and deeply sherried.
The Experience: Moving to the heart of Speyside, this cask-strength powerhouse demonstrated the transformative impact of active oak and unreduced proof. Pouring rich and dark, it delivered intense layers of mocha, heather honey, and baking spices. On the palate, ripe plums, dark chocolate, and ginger snaps sparked vibrant table conversations as guests explored how a few drops of water unfurl its velvety sweetness.
3. Caol Ila 12 Year Old (Islay | 43% ABV)
The Profile: Maritime, smoky, and crisply balanced.
The Experience: We closed our tasting journey on the windswept shores of Islay. Caol Ila 12 provided the quintessential coastal finale, balancing damp campfire peat and seaside brine against sweet malt, gentle pepper, and dried fruit undertones. The lingering, smoky finish left the room in high spirits as the dinner continued.
